今やビールは香りづけにホップを使うのは当たり前ですが、その昔16世紀以前はホップはまだ使われておらず、グルートと言ってヤチヤナギ、アキレア、コリアンダー等々、各種ハーブを調合したものを使用していました。その調合方法は極秘とされ、グルートは教会や修道院、貴族の貴重な収入源でした。
このヨーペンは1401年創立のまさにそのグルートを使用した昔ながらの製法で造られたビールです。
